Papas arrugadas con mojo

Papas arrugadas” is a typical potato dish from the Canary Islands. You can often order it as a tapa or as a side dish alongside your main course. Papas arrugadas is served with traditional mojo sauce, which comes in two varieties: a red sauce based on paprika, and a green sauce based on coriander or parsley.

You can find this specialty in almost every restaurant. Each chef has their own (secret) recipe for the mojo sauce. This is definitely something you must try during your vacation in Tenerife.

Pulpo a la plancha

Barraquito

Een “barraquito” is een koffie, maar het is net even anders dan wat je gewend bent. Het bestaat namelijk uit verschillende lagen: de basis is gecondenseerde melk, met daarbovenop Licor 43, afgetopt met melkschuim. Op het melkschuim wordt vervolgens voorzichtig warme melk gegoten, en als laatste een stevige scheut espresso. Deze koffie wordt voornamelijk na het eten gedronken en is een echte traktatie.

A guachinche is a traditional eatery on the Spanish island of Tenerife.
